      <image:caption>Debbie's Brussel Sprout Salad This recipe was given to me by my friend Debbie, which we made in Palm Springs for New Year's Eve. It was one of the most delicious salads I've had in my life. Brussel sprouts are part of the cruciferous vegetable family which includes cauliflower, kale, broccoli, cabbage and collard greens, and the raw variety retain more nutritional value versus cooked sprouts, and just one cup contains your daily allowance of Vitamin C and K (with just 38 calories). Walnuts are a rich source of heart-healthy monounsaturated fats and an excellent source of omega-3 fatty acids. Let this salad sit for a couple of hours after mixing to help marinate and soften the raw sprouts and bring out the fullest flavor. Ingredients: 1 lb. raw brussel sprouts, chopped 1 organic apple, any variety 1 cup chopped walnuts 1 small red onion, finely chopped 1/3 cup red wine vinegar 1/2 cup olive oil Juice of 1 lemon Salt and pepper  </image:caption>
